Pear & Elderflower Cold Brewed Sparkling Tea with Pure, British Honey

The story behind the fizz

Most soft drinks are made in minutes using syrups and concentrates, but we prefer a slower pace. We build our flavours from the ground up. It starts with our Chunmee Taipan Superior green tea, which we cold-brew for a full 24 hours. By steeping the leaves slowly in cold water, we retain the healthy antioxidants but leave behind the bitter tannins often found in hot-brewed tea.

The result is an incredibly smooth base that we blend with raw pear juice—a crisp mix of Conference and Beurre Hardy pears from Herefordshire orchards. We then add a touch of Wye Valley elderflower for a floral lift and a drizzle of pure British honey from my own Hampshire hives for a natural, earthy sweetness. A gentle carbonation is the final step to a drink that is clean, refreshing, and never cloying.

If you are looking for a sophisticated, "dry" alternative to sugary sodas, this is it. On the first sip, you will find the bright tartness of the Herefordshire pears, followed quickly by the floral scent of the elderflower. The finish offers a rounded, settled sweetness from the Hampshire honey that perfectly balances the light, grassy notes of the premium green tea.
